Joshoken is a brand under Tashiro Koji’s Saikyo Gundan, which emerged the top winner during the Super Tsukemen Exhibition in Shinjuku in October 2016.
Joshoken is inspired by the cuisines of Ibaraki, which are characterised by a marriage of gyokai and meat-based broth flavours.The soup broth requires 15 hours of boiling over high heat and constant stirring. After which, the broth is filtered and cooled using a container placed in an ice bath, and then placed in the fridge for one full day to bring out the umami flavour.
Tsukemen is served with noodles separated from the piping hot soup. Doing it this way allows the noodles to maintain its al dente and firm texture throughout the meal. Two must-try mainstays at Joshoken are the Maze Soba and Special Kotteri Tsukemen.
The Maze Soba is a popular dry offering in Japan featuring garlic chives, spring onions, seaweed, mentaiko, mayonaise, homemade chilli, minced meat and poached egg. After finishing the ramen, diners can add on the rice with specialty soup set or porridge set to enjoy with the remaining toppings. A signature dish, the Special Kotteri Tsukemen’s piquant broth is a blend of chicken, pork as well as ingredients such as onion, ginger, garlic and carrot leek. The offering is then topped with a medley of pork belly chashu, pork collar chashu, menma, nori, spinach, ajitama, fishcake and lime.
