Craving fried rice but don’t want the extra carbs? Try this delicious low carb cauliflower fried “rice” which leaves you satisfied and is amazingly versatile as you can add your favourite meat or vege to it. My go-to comfort food. 

Cauliflower fried rice

1 tbsp coconut oil or your preferred cooking oil
1 cup onion, finely chopped
2 cloves garlic, minced
200-250g prawns, peeled and deveined
1 medium carrot, chopped
1/2 cup peas
1/4 cup red bell pepper, finely chopped or red chilli sliced
2 cups cooked cauliflower rice *
2 eggs, beaten
Fish sauce and pepper to taste


1.Heat a wok or large pan over medium-high heat. Melt the coconut oil and add the onion and garlic to the pan. Cook for 3-4 minutes until the onion starts to soften. Add the prawns and cook for 1 minute.
2.Add the carrot, peas, and bell pepper to the pan. Cook for 3-4 minutes, and then stir in the cauliflower rice. Clear a circle in the center of the pan and pour in the beaten eggs. Stir to scramble the eggs and then combine with the other ingredients. Season with fish sauce and pepper to taste.

* For cooked cauliflower rice all that’s required is a food processor and a large head of cauliflower. I like to roast mine in the oven till tender then chop up the cauliflower in a processer until it starts to look like rice, and then you can use it in the recipe . If you don’t have an oven you can try steaming it also.
