RAINBOW FRIED RICE

Ingredients
2 cups of rice (cook in 2 cups of water)
8 shallots (small version of onions) (to chop it)
1/2 can of luncheon meat (to cut into 1 cm cubes, stir fry till golden brown)
1 medium USA potato (cut into 1 cm cubes)
5 tablespoons of mixed vegetables
4 eggs (beaten)

Seasoning Ingredients
3 tablespoons light soya sauce
3 tabs of pepper

Methods
1) Pan fry the potato cubes with few tablespoons of oil, set aside.
2) Stir fry chopped shallots in 2 tablespoons of oil till fragrant. Add in beaten eggs, swirling it around immediately.
3) Add in cooked rice and stir fry it by separating the grains for 2 minutes.
4) Add in mixed vegetables follow by light soya sauce (around the wok’s surrounding) and pepper.
5) Add in the potato cubes and luncheon meat cubes.
6) Stir fry well for a few minutes until well mixed and dish it up.

Note:
– above recipe is for serving 2 adults.
– Make sure the rice is cooled before frying it.
