WATERCRESS PORK RIB SOUP

Watercress provides good source of vitamins B1, B2, B6, C, E, manganese and carotene. Moreover, it also contains calcium, fiber, iron and copper.  Recent research even found that watercess may be able to prevent cancer and recovery from cancer.  So try out this simple recipe, for the benefits of your family.

Ingredients
2 litres of water
400 grams of watercress (ends trimmed, separate stems and leaves)
25 pieces of red dates (wash with tap water)
2 flat tablespoons of wolfberries (wash with tap water)
500 grams of pork ribs. (rinsed and scalded with boiling water)
1/5 winter melon (cut into 2cm cubes)
5 Dash of pepper
1 flat teaspoon of salt

Methods
1) Add watercress stems and red dates in water. High heat to boil.
2) Add in pork ribs, reduce heat and simmer for about 20 minutes.
3) Add in watercress leaves and winter melon cubes. Continue to boil for 5 minutes.
4) Add in pepper and salt.
5) Transfer soup into slow cooker and maintain low heat for 4 to 5 hours.
6) Add in the wolfberries into the soup and serve.

NOTE: The recipe serves 4 adults.
