Chicken soup has long been known to be able to sooth cold and many other discomfort.  Some even claimed that it could cure your bad mood! Here’s one simple recipe of chicken soup, hope that it could give you a quick fix.

900 grams of chicken thighs
2 litres of water
5 small carrots (remove skin and cut in to small pieces)
3 China potatoes (remove skin and cut into cubes)
1kg Winter melon (cut into cubes)
4 strips of sweetcorns (chop into 4 to 5 parts)
30 pieces of red dates
4 (thumb-size) slices of ginger
1 tablespoon of wolfberries
8 tabs of black pepper
2 round teaspoons salt
Some parsley for garnishing

1) Place chicken thighs in boiling water to remove excess oil.  Set aside.
2) Add in chicken thighs, carrots, potatoes, ginger slices, sweetcorns and red dates in water to boil.
3) Once boiled, reduce to medium heat.  Cook for about 1 hrs and 10mins.
4) Add in winter melon cubes, pepper and salt.  Continue to cook for another 20mins.
5) Add in wolfberries and off heat.
5) Garnish with parsley and ready to serve.
